Aloo Gajar Matar- Vegetarian Potato, Carrot & Pea Curry

Ingredients
Potatoes- parboiled and cubed in about 1" pieces
Carrots- parboiled and cubed 
Frozen peas
Bunch of fresh coriander
Fenugreek Leaves
Coriander Powder
Chilli Powder
Chillies Fresh
Fresh Tomatoes- cut into quarters
Fresh ginger
Garlic
Medium sized Onion
Oil & butter for frying
Method

Step 1

Peel and slice onions, ginger and chillies (if you don’t want it too hot take out the seeds)

Step 2
Peel and cut carrots into large chunks and cook with the onions ginger and chillies for approximately 15 mins take out the carrots at the same time peel and cut the potatoes into large chunks and also parboil. (We are only looking for them to pre blanched, so they need to be able to hold their shape).

Step3
Now add the tomatoes and let cook until they have dissolved to make a sauce also add the masala (spices).
Step 4
Time to bring all of the ingredients together now that the tomatoes have dissolved add the carrots and potatoes and let them cook to take on the flavours. We can now add the frozen peas into the curry.
Tips:
There is another popular curry based on the same recipe- Aloo Gobi (potato & cauliflower). We can repeat the whole cooking process. This time all we have to do is substitute the cauliflower for the carrot and we get another tasty vegetarian dish.

      I know the time is strange. Did same things to me. I'll try to log in to admin's account and see if I'll be able to change it:-)
