We are all now in Holi festival mood, so here is another recipe for delicious Indian dessert. As I mentioned before there’s no celebration in India that would go without traditional sweets. Gajar Ka Halwa also known as gajrala is a traditional Punjabi dessert made with carrots and milk. Gajar Halwa is delicious warm or cold.
Ingredients:
1 kg Carrots- peeled and grated
1 litre Milk
Few Cardamom seeds
1 litre Milk
Few Cardamom seeds
½ cup Water
3 Tbsp Ghee
2 Tbsp Almonds
2 Tbsp Pistachios
450 g Sugar
3 Tbsp Ghee
2 Tbsp Almonds
2 Tbsp Pistachios

1. Wash and grate the carrots. Pour the water to heavy based pan and bring to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.
2. Add the milk. Cook on a low flame for 1 hour stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.
3. Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins. Mix well.
4. Remove the gajar halwa from heat and arrange in a serving dish. Garnish with chopped almonds and pistachios. Serve cold, hot or at room temperature.
